January Make For Christmas Hamper
It's my first make of 2023; its citrus season, so I'm making marmalade. I always try and make enough marmalade to last us the year, but it's never enough. This year, I'm trying new things, including dry January... it sucks, so I am altering my recipe.
1 kg Saville oranges
75ml of lemon juice
2 kg demerara sugar
I scrub the oranges & removed the buttons at the top.
I halfed & juiced the oranges.
Then I sliced the pith and peel (I like it chunky) and put it in a bowl along with to the orange juice and added 2.5 liters of water, then left it to soak for 24 hours in a bowl.
The next day, I boiled the mixture for about 2 hours in a preserving pan.
After the alloted time, I added lemon juice and sugar and stirred until the sugar was fully dissolved.
Once dissolved, I continued to boil the mixture until it reached the setting point then poured into sterilised jars.
